The present invention relates to a system for the production control of aggregates (4) in a quarry, which comprises at least one crusher (3) for the calibrated crushing of aggregates, and means (5) for transporting the same. The present system is provided with at least one device (6) for the shape and/or dimensions recognition of aggregates. The present invention further comprises (7) means to adjust the operation of at least one crusher on the basis of the information deriving from at least one recognition device.
